Watercress & Spinach Soup
In a medium sauce pan heat butter together with onion, celery, thyme, garlic, potatoes and the watercress, let cook at medium heat for about 3 minutes.
Poor the vegetable white stock over till vegetable are cover and let simmered for 30 minutes.
Transfer the mixture to a mixer and then blend till stage of cream, set a side.
In a medium sauce pot heat the salted water with the fresh spinach, bring to a bowl and let cook for one minute: Drain and transfer all the cooking spinach mixture to a mixer and blended till stage of cream, add to the watercress blended soup.
Season with salt and pepper
In a small stainless still bowl mix the cream with a whip, till the cream star to peak, add the cayenne pepper and keep a side.
To serve: Poor the soup in a shallow plate and spoon some whipping cream. Spread fresh pepper over the top
